I've made up quite a few complete brake systems using stainless and brass exclusively. It may just be the fact you are not tightening things enough. With stainless to stainless, I have had to retighten some junctions after I "thought" I had them tightened enough. To the point where I was worried about twisting them off. I've also noted you have to tighten more when using Dot 5 brake fluid. Some people have issues with Dot 5 but I have not had any problems using it. Just my experiences anyway.
